What you don’t know could hurt you

Not all cookware is made the same way. Some materials are harmful to our health from the beginning while others deteriorate overtime and leach chemicals into your food a little at a time. Let’s take a look at some common cookware and the reasons they should be avoided.

Unsafe cookware

  • Ceramic: Most ceramic cookware may contain lead, especially if it is not manufactured under strict United States regulations. Lead poisoning is hard to detect but it is one of the possible side effects of using ceramic. Two common types of ceramic are enameled and glazed and both contain toxic ingredients. With ceramic finishes, even small scratches contribute to the release of harmful particles into food.
  • Aluminum: Aluminum has been used in cookware for years because it is inexpensive, lightweight and it is a great heat conductor; however, aluminum reacts with salty or acidic foods, including tomatoes, vinegar and citrus juices. This means some of that aluminum can leach into the food. Teflon: Teflon coating is a popular finish because it is non-stick but even after careful use this thin coating will start to peel off or degrade exposing aluminum or any other toxic particles. These harmful materials will leach into the food we eat.
  • Microwavable plastic: Even plastic that is labeled safe for microwave use should be avoided, as repeated use tends to break down the integrity of the material causing even the so-called safe plastics to leach into the food.

Safe cookware

Thankfully, all the research into unsafe cooking materials has led to the creation of safe cookware. Even though some of these have been around for years, they are made even safer now.

  • Stainless steel: The advantages of stainless steel are that heat distributes evenly and it does not react with ingredients; there are no toxic chemicals to absorb. People who avoid steel because they think foods stick to it might be surprised to realize they really don’t stick when used properly.
  • Glass: For baking, glass is a better alternative than aluminum or Teflon. And for storage, glass is better than plastic which can also leach into the foods.
  • Iron: Iron is another safe alternative as long as it is not coated with ceramic. Iron is heavier than other cookware, but one health advantage is the extra iron we get through food cooked in cast iron.
